When you find yourself with more peaches than you know what to do with (a good problem to have!), this recipe for hot honey peach pasta salad is just what you need. This riff on a classic pasta salad features ripe and juicy peaches, savory bacon for a bit of crunch, and a vinaigrette made with hot honey to add a little sweetness and spice. This tasty pasta salad makes a great summertime picnic side dish and makes plenty to share at a potluck.

If you can find only unripe peaches, use the paper bag trick to ripen the unripe peaches: Place the unripe fruit in a paper bag and let it sit on the countertop. Check for softness and ripening after 24 hours.

Directions

Editor’s Tip: You may not need to use all the dressing. After all, you can always add more later. You can also reserve some of the dressing to refresh any leftovers because the pasta will soak up the dressing over time.

Peeling the peaches is totally up to you! To easily peel ripe peaches, blanch them in boiling water, then shock them in a bowl of ice water. The peels should easily slip off with a paring knife.

  • 3 medium peaches, chopped
  • 1 cup grape tomatoes, halved
  • 1 cup crumbled cooked bacon
  • 1 cup fresh mozzarella pearls
  • 1 cup loosely packed basil leaves, chopped
  • 1/2 cup champagne vinegar
  • 1/2 cup olive oil
  • 1/4 cup hot honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/4 teaspoon pepper
