Elise Jesse’s Apple Bourbon Barbecue Sliders

Ingredients

  • 2 to 3 pounds boneless beef chuck roast
  • Salt and pepper to taste
  • 2 cups barbecue sauce (Apple Bourbon preferred)
  • 1 package ready-to-serve fully cooked bacon
  • 1 small onion, thinly sliced
  • 4 garlic cloves, minced
  • 1/4 cup packed brown sugar
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons juice from banana peppers
  • 1 package slider rolls (12 count)
  • 8 ounces shredded provolone cheese
  • 6 ounces sliced provolone cheese
  • 2 tablespoons butter, melted
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder

Directions

  1. Season chuck roast with salt and pepper. Place in a 7- or 8-qt. slow cooker. Add barbeque sauce, bacon, onion, garlic, brown sugar, Worcestershire and juice from banana peppers. Cook, covered, on high until meat is tender and shreds easily, 6-7 hours.
  2. Preheat broiler. Slice slider rolls in half and place on a foil-lined baking sheet. Put sliced provolone over roll bottoms. Top with shredded beef and sprinkle with shredded provolone. Replace roll tops.
  3. In a small bowl, combine butter, Italian seasoning and garlic powder. Brush over rolls.
  4. Broil 3-4 in. from heat until cheese has melted and rolls are browned, 4-5 minutes.
